Wholesome Sweet Potato & Chickpea Stew Over Romaine Salad: A Nutritious Dinner Delight
Today, I'm excited to share with you the evening's meal. It's been a wonderfully healthy day, and we've even included a delicious veggie puree (check out the link for that recipe). Tonight's dinner features a nutritious mix of sweet potatoes, scallions, garlic, bell peppers, and chickpeas. This dish is not only a feast for the taste buds but also for your overall well-being.
Ingredients:
2 large sweet potatoes
A bunch of scallions
2 garlic cloves
2 bell peppers
1 can of chickpeas
2 cups of oat milk (or 2 dl, depending on your location)
2 tablespoons olive oil
2 tablespoons ginger, minced
1 tablespoon cinnamon
Fresh cilantro, for garnishing
1-2 cups baby romaine lettuce
1-2 tablespoons curry powder (adjust to taste)
Lemon juice (1-2 tablespoons)
Salt to taste
Croutons and parmesan cheese for serving
Optional: Ground turkey meat or chicken for added protein
Method:
Start the Stew: Begin by heating olive oil in a large pot. Chop the scallions, press the garlic cloves, and mince the ginger. Add these to the pot and sauté for about a minute or until wilted.
Spice it Up: Stir in the cinnamon and curry powder, mixing well with the sautéed ingredients.
Veggie Time: Chop the sweet potatoes and bell peppers and add them to the pot.
Add Liquids and Chickpeas: Incorporate the chickpeas, oat milk, and additional water to cover the ingredients. Season with salt and a bit of lemon juice for an extra zing.
Let it Cook: Simmer the stew for about 20 minutes or until the sweet potatoes are tender.
Prepare the Salad Base: While the stew cooks, arrange the baby romaine on plates, adding croutons and parmesan cheese for extra texture and flavor.
Serve: Once the stew is ready, spoon it over the prepared salad. Add as much or as little of the stew liquid as you prefer.
Garnish and Enjoy: Top with fresh cilantro and, if desired, serve with ground turkey meat or chicken.
